You can pre-order liquor thru the Bon Voyage Dept at Carnival so that it is waiting for you in your cabin.  Liquor cannot be ordered on-line, you must call the Bon Voyage Dept:

Carnival allows each guest (21 years or older) to bring 1 bottle of wine or champagne onboard with them in their carry on luggage.   Minimum drinking age on Carnival is 21 years.
